Healthy 3-Ingredient Pancakes

Healthy 3 Ingredient Pancakes

If you know me, then you know I’m really into fitness and trying to live a healthy lifestyle. I’ve been keeping an eye out for healthy alternative recipes to foods that I love. I’m also a sucker for super easy, time saving recipes. (Who doesn’t love that?) These healthy 3-ingredient pancakes definitely hit the spot on a Saturday morning.

And I don’t feel guilty about eating them!

So, what are the 3 ingredients? Eggs, bananas, and a pinch of cinnamon. I typically have all of the ingredients on hand, too. Eggs and bananas are both staples in my house. Although the pancakes are made with bananas, the banana flavor is not overwhelming.

The texture is also very different from the typical, fluffy pancakes. They are pretty dense. I’m fine with the texture. Would I rather have fluffy buttermilk pancakes drenched in butter and syrup? Well, probably, but I’m also a big fan of these healthy 3-ingredient pancakes. Living a healthier lifestyle involves some sacrifices but it doesn’t have to be full of bland recipes.

How To Make Healthy 3-Ingredient Pancakes

Start by grabbing your ingredients.

Then throw them all in a bowl to combine.

You can mash up the banana first (a fork works well for this) or, if you are lazy like me, throw them all in a bowl together and mix it up.

It’s OK if there are a few banana lumps left in the mixture.

Since these pancakes do not contain flour, I’d suggest making them smaller than usual pancakes so they hold together. I cook two at a time in a non-stick frying pan. Cook them 2-3 minutes on each side until golden-brown.

I topped my pancakes with butter and organic maple syrup. (I know this makes them slightly unhealthy… but everything in moderation, right?)

There are plenty of extras that you can incorporate to this recipe to make it your own. I like to add fresh fruit, like strawberries or blueberries. Sometimes I also add a splash of vanilla extract. I’ve also heard that you can add protein powder but I have yet to try it that way. (I’ll update this recipe if I ever try it.)
